San Choy Bau

Ingredients

  • 1 tsp olive oil
  • 400g lean pork mince
  • 1 tsp finely chopped garlic
  • 1 tsp grated ginger
  • 4 spring onions, sliced
  • ½ red capsicum, finely chopped
  • ¼ cup zucchini, finely chopped
  • 2 medium mushrooms, finely chopped
  • 2 tbs soy sauce
  • 4 large iceberg lettuce leaves
  • Sliced red chilli to garnish (optional)

Method

  • Heat olive oil in a medium sized frypan. Add mince, garlic and ginger and cook for 2 minutes, breaking up mince with a wooden spoon.
  • Add spring onions, capsicum, zucchini and mushrooms and continue cooking until vegetables have softened and mince is cooked through.
  • Add soy sauce and stir through. Remove from heat.
  • Serve mince mixture in lettuce cups and garnish with more spring onion slices and chilli (optional).
