Healthy Quinoa and Black Bean Salad

Healthy quinoa and black bean salad

Ingredients for salad: 

  • Quinoa 1 cup 
  • Water/Stock 2 cups 
  • 1 can of black beans drained 
  • 1 red capsicum diced 
  • 1 cup cherry tomatoes halved 
  • ½ cup red onion, finely diced 
  • ½ cup fresh coriander chopped 
  • ½ cup corn kernels 
  • 1 avocado diced 

Ingredients for Avocado lime dressing: 

  • 1 avocado 
  • Juice of 2 limes 
  • 2 tablespoons olive oil 
  • 2 cloves of garlic, minced 
  • 1 teaspoon honey 
  • Salt and pepper 

Method 

  1. Cook the quinoa in the water/stock for 15 minutes, drain and then fluff with a fork 
  2. Add all ingredients to a blender for the dressing and blend until smooth. 
  3. Add all salad ingredients together, then pour over the dressing and toss to combine 
  4. Serve with extra coriander and lime wedges
