Brown Rice Salad

Looking for a quick, hearty, and healthy meal option that is also incredibly satisfying? Try our Brown Rice Salad recipe!

Ingredients:

  • 1 cup cooked Brown Rice
  • 6 spring onions, chopped
  • 1 Red or Green capsicum, chopped
  • 1/3 cup currants
  • 2 tbls toasted sunflower seeds (or Pepitas)
  • 1/3 cup chopped parsley
  • 6-8 tbls dressing

Dressing:

  • 4 tbls soy sauce
  • 1/3 cup sunflower oil (or other oil)
  • 2 tbls lemon juice
  • 1 clove garlic
  • Salt and pepper to taste

Instructions:

  1. Cook brown rice according to package instructions and let cool
  2. Chop spring onions, capsicum, and parsley
  3. Toast sunflower seeds until lightly browned
  4. Whisk together dressing ingredients
  5. In a large bowl, mix together rice, vegetables, currants and seeds
  6. Pour desired amount of dressing over salad and toss to coat evenly
